Ghost Peep Brownies

Ingredients:

Brownies:

  • 1 3/4 cup Flour
  • 2 cup Sugar
  • 1/2 cup Cocoa Powder
  • 1 tsp Salt
  • 5 Eggs
  • 1 cup Vegetable Oil
  • 1 tsp Vanilla

Icing:

  • 7 oz Marshmallow Creme
  • 1-2 boxes Ghost Peeps 2

Directions:

  1. Grease 13×9 pan.
  2. Preheat oven to 350.
  3. Combine brownie ingredients and mix until well blended. 3
  4. Pour batter into prepared pan and bake 30 minutes or until toothpick inserted in center comes out clean.
  5. Allow to cool.
  6. Cut into individual brownies and place on heat proof plate(s).
  7. Heat marshmallow creme (about half at a time) in microwave for 20-30 seconds and spread over brownies.
  8. Top each brownie with a ghost peep.
  9. Take a butane torch and brown the marshmallow creme around peep.

follow me We love Cheesecake in this house and what I really love is easy cheesecake…. These pumpkin cheesecake parfaits are super easy and quick to make but taste just as good as regular cheesecake. What’s also really cool about this recipe is that you can essentially use any kind of fruit in it to make a different type. I like using strawberries to make a strawberry cheesecake parfait. Enjoy!

Pumpkin Cheesecake Parfait

Ingredients:

  • 10 Graham Crackers
  • 8 oz Cream Cheese softened
  • 1 cup Pumpkin Puree
  • 1 tsp Vanilla
  • 1/2 cup Brown Sugar
  • 3 tsp Pumpkin Pie Spice
  • 1/4 tsp Nutmeg
  • 1/4 tsp Cinnamon
  • 16 oz Cool Whip 2

Directions:

  1. Pulse graham crackers in a food processor to crush. 3
  2. In a large bowl, beat cream cheese until smooth.
  3. Add pumpkin, vanilla, brown sugar and spices. 4
  4. Beat until combined.
  5. Fold in 8 oz of Cool Whip into the pumpkin mixture until blended.
  6. Transfer mixture to a zippered bag and clip the corner for piping.
  7. Transfer remaining Cool Whip to a zippered bag and clip the corner for piping.
  8. Place a layer of crushed graham crackers in the bottom of each serving container.
  9. Pipe alternating layers of whipped topping and pumpkin mixture into each serving.
  10. Garnish top of each with a dusting of graham cracker crumbs.
  11. Refrigerate for about an hour.

I love hearty soup..it’s so much better than plain old broth soup. It’s hearty, warms your stomach and fills you up quickly. I like making this soup all year long but it’s my favorite during the fall and Winter when it’s cold outside and I can eat it by the fireplace. ;-) You can use fresh Pumpkin or just use canned Pumpkin which is a little easier. Spicy Pumpkin Soup

Ingredients:

  • 2 tbsp Butter
  • 1 tbsp Olive Oil
  • 1 cup Diced Onion
  • 1 tsp Minced Garlic
  • 30 oz Pumpkin Puree
  • 3 cup Chicken Stock
  • 1 tsp Kosher Salt
  • 1/2 tsp Curry Powder
  • 1/4 tsp Crushed Red Pepper
  • 1/8 tsp Cayenne Pepper
  • 1 tbsp Brown Sugar
  • 1/4 cup Heavy Cream
  • Toasted Pumpkin Seeds (garnish) 4

Directions:

  1. In a large pot or stockpot, sautee onions in oil and butter until tender.
  2. Add minced garlic and cook another minute. 3
  3. Add the pumpkin, chicken stock, brown sugar, salt and spices.
  4. Cover and simmer 20-25 minutes.
  5. Blend the soup using an immersion blender or in batches in a regular blender.2
  6. Return the mixture to the pot and add the heavy cream.
  7. Cook for 5-10 minutes.
  8. Garnish with toasted pumpkin seeds, croutons and/or drizzle of heavy cream.

Yummy! I make a delicious Snickers Caramel Apple salad but this time I made a pie and it turned out awesome! This pie is a no bake recipe which is nice over the Summer. I love making this to take to parties, get togethers or just a dessert for a BBQ night. I recommend using green apples but you can use red too if that’s what you have at home. Enjoy…

No Bake Snickers Caramel Apple Pie

Ingredients:

  • 1 Graham Cracker Pie Crust
  • 3-4 Green Apples
  • 5 Snickers Bars (or 20 fun-sized bars)
  • 8 oz Cool Whip thawed
  • 1 box Instant Vanilla Pudding Mix
  • 1/3 cup Sweetened Condensed Milk
  • 2/3 cup Milk
  • 1/4 cup Caramel Syrup or Caramel Ice Cream Topping. 2

Directions:

  1. Dice the apples and Snicker Bars.
  2.  3
  3. Place diced Snickers on crust (reserve about 1/4 to go on top).
  4. Place diced apples on top of Snickers (reserve a few for top). 4
  5. Pour most of the caramel over the apple and snickers pieces (reserve about 1/4 to go on top).
  6. Mix the cool whip, vanilla pudding, sweetened condensed milk and milk in a bowl until blended. 5
  7. Pour over the top of the pie.
  8. Drizzle with remaining caramel over the top and garnish with snickers and apple pieces.
  9. Refrigerate for 3-4 hours.

I love anything to do with peanut butter….that’s why I love this next recipe for Reese’s Cup Blondies. These are great to make for parties, bake sales or just a yummy dessert. The peanut butter cups just melt in your mouth. Enjoy this delicious treat.

Reese’s Peanut Butter Cup Blondies

Ingredients:

  • 1 cup Peanut Butter
  • 1/4 cup Butter softened
  • 1/2 cup Brown Sugar
  • 1/4 cup Sugar
  • 1 egg
  • 2 tbsp Milk
  • 1 tsp Vanilla
  • 1 cup Flour
  • 1/2 tsp Baking Soda
  • 1/8 tsp Salt
  • 10 oz Reese’s Snack Size

Directions:

  1. Preheat oven to 350.
  2. Grease 8″ baking pan.
  3. Combine peanut butter, butter, brown sugar and sugar in large bowl and mix until well blended.  3
  4. Add in egg, milk and vanilla and beat until blended.
  5. Combine flour, baking soda and salt and mix well in another bowl, then add to peanut butter mixture. 4
  6. Beat until blended.
  7. Spread half of batter in prepared pan.
  8. Chop 9 Reese’s into bite size pieces. 5
  9. Distribute chopped peanut butter cups over batter.
  10. Using a spoon, drop remaining batter on top of peanut butter cup pieces. 6
  11. Bake 30 minutes or until browned.
  12. Chop 3 more Reese’s into pieces and press lightly into top of blondies while still warm.
  13. Cool completely before cutting.
